Soup & Sandwich Suppers

I made this the other day and it was yummy yummy; the whole family enjoyed it! It is quick to do too. A few people have asked me for the recipe. Maybe I’ll start a new category at XandraExpressions… Accompanying the soup were grilled cheese sandwiches. Soup & Sandwich suppers always make me think of my grandparents! A perfect light meal for a cold winter dinner. If you make this, let me know what you think…

Tomato-Rice Soup : serves 8

Ingredients
3 tbsp unsalted butter
1 small onion finely chopped
1 small garlic clove, minced
2 tsp dried oregano
2/3 cup white rice
salt&pepper to taste
3 cups chicken stock
16 ounces strained tomatoes or tomato sauce
2 cups milk

Method
Melt butter over medium heat in a pot; add garlic and onion stirring till onion is translucent (3 min.). Add oregano, rice, salt and pepper, continue to cook stirring constantly to coat rice with butter. Add stock and tomato sauce. Bring to boil then reduce heat immediately, simmer till rice is tender, 25 min. Stir in milk, cook until soup is hot. Adjust seasoning to taste (salt, pepper, oregano), thin with milk as needed.
